This salsa is incredible and you are going to agree that it is the best that you have ever made! I like a mild salsa so I suggest adding in an extra jalapeño or leaving in the seeds for more of a kick. This is so easy to make and only about 1o minutes of chopping are involved to create the best restaurant style salsa right in your slow cooker!
Quarter and seed tomatoes. Cut tomatoes into 1/4-inch dice and transfer to a bowl. Wearing rubber gloves, seed and finely chop chiles. Finely chop enough onion to measure 1/4 cup and chop cilantro. Stir chiles, onion, cilantro, and garlic into tomatoes with sugar and lime juice and salt and pepper to taste. Salsa may be made 1 hour ahead and kept at cool room temperature.
Many of us begin a vegetable garden with dreams of preserving the harvest dancing in our heads. Even if you don’t grow food, the fresh ingredients for homemade salsa are abundant at farmers markets and farm stands during the growing season. Stock up with enough to can a batch of homemade salsa and enjoy the delicious flavors of summer all winter long.
Place all ingredients in a food processor or blender, with the tomatoes, chilies, and onion on the bottom (closest to the blade). Pulse couple of times to chop up the larger chunks, and then puree until salsa reaches desired texture. Taste the salsa and season with additional salt or honey, as desired.
Place the tomatoes, onions and garlic on a baking sheet and roast for 15 minutes or just until the onions and tomatoes start to get a little char on them. Remove the baking sheet from the oven and let the tomatoes cool for about 5 minutes.
If you’re all about the tomatoes in your fresh salsa, then this recipe is for you. With only a few other ingredients added (chile peppers, onion, cilantro, and lime juice) this fresh salsa recipe has lots of sweet and refreshing tomato flavor.
Bring a large pot of water to a rapid boil. Carefully drop the tomatoes in the boiling water for 30 seconds them remove. Peel the skins and squeeze the seeds to remove them along with excess water. Place the tomatoes in a colander to drain. Chop the tomatoes.

Hmmmm…I’ve never minded the vinegar flavor if it was evident, but maybe it was just different for me. ?? Is it possible that the peppers and tomatoes were measured before chopping finely instead of after? That would explain both the low quantity and the high vinegar, wrong ratio.
Chop the jalapeno peppers. If you like your salsa hot, leave the white pith/membranes. Contrary to popular belief, it’s not the seeds that are hot, it’s the white pith that surrounds them. It’s always recommended that you use gloves while handling chili peppers.
Turn your skillet into a Mexican comal, aka griddle, by slowly charring onions, garlic, and peppers in a dry skillet. We like to use this traditional dry char technique because it coaxes sweet, earthy flavors from the vegetables and gives them just a hint of smokiness.
I tripled the recipe and added 1/4 c. extra sugar and ended up with 21 pints. You can use quarts instead, but refrigerate after opening. We like pints because we eat the whole thing at once. The entire jar is only 120 calories. Less if you use Splenda.
And for those of you wondering, can you use canned tomatoes? Yes. I have used fire-roasted canned, too, to supplement the tomatoes I had on hand. I just add the canned at the end of cooking down my fresh tomatoes. I even made a batch with all my left over tomatoes from saucers, beefsteaks, cherries…I throw into a food processor with skins on. We like it with all the bits of skins, too. Cuts down the time by a lot for making big batches like me!
Individually chop all the peppers, onions, garlic, and cilantro and put them in a large bowl. A food processor comes in real handy here, but you can do it by hand as well. The processor helps, because I like my salsa pretty smooth, but you can make it chunky style too, that just depends on your personal preference.
Glad you love the salsa Maria. Yes, you should be fine with half lemon and half lime. Sometimes my batches come out with a little extra as well. You should be fine. Most canning recipes vary in quantity results from one batch to another. Par for the course I guess. Anyway, thanks for the comment.

@Carl. My wife is Mexican and I’ve traveled there many times; particularly the state of Michoacán where she’s from. In Mexico, the sauce that you make is called a “Salsa Cruda” (Raw Sauce). It is perfectly fine to make it without frying/simmering since it’s just one of the MANY ways to make a sauce in the Mexican kitchen. I must say that adding cumin to a sauce is more typical of Tex Mex than the authentic Mexican style sauce. Also, lime is only added to something such as pico de gallo. Salsa verde is another sauce that made by cooking tomatillos, jalapeños and a couple garlic cloves in slightly boiling water for about 10 min. Once the tomatillos are cooked, you add them with a little bit of the cooking water, the chilies, garlic, a piece of white onion, cilantro and salt to a food processor. This is carefully processed due to the hot liquid. Tomatillos can be pretty acidic so a pinch of sugar can be added to counter that. I’ve been in a ranch in Michoacán where they cooked a goat over a wood fire. I saw them make the “birria” (typical Mexican sauce for roasted meats) over the same wood fire. It picked up the smoke taste and I’ll tell you, it was the best BBQ goat that I EVER had!
I used fresh grape tomatoes, green small tomatoes and roma tomatoes from my garden and it was sooo good. Seriously addictive. I’m happy I found this, thank you. I made it twice in the last month now and Im ashamed to say I have ate 1-2 jars in one week. It makes almost 3 jars every time for me using 3 pounds.

Your local Cooperative Extension Service will have lots of good information on food preservation; master preservers to help, and workshops with the latest information on this vital topic. So go for it!
Wash, peel, seed, and chop your ingredients first, then measure or weigh them. A kitchen scale comes in very handy when preserving the harvest. I have included both weight and cup measurements in the recipe below. Select one method of measuring and stick with it throughout the recipe so the ratio of ingredients remains the same.
I just made this using jalapeños instead of serrano. I used a larger onion and one more tomato. Now I boiled then simmered but it didn’t get as red as the photo above. Is this normal or did I do something wrong? How do I get that deep red tone?
I can lots of salsa every season. Not going to say it isn’t a lot of work. It is a labor of love. Make a big batch, no preservatives in it. You can eat it all winter long. I add black beans and corn to mine, it is lunch in a jar. It last 1 year after canning, but you will eat it up before a year goes by.
For many years I had in-laws from Mexico – great cooks – and also a live-in housekeeper from there. The latter also cooked for us. Salsa fresca aka pico de gallo is intended to be just that. Fresh. It is not intended to be hot. The chiles add a little pop, but are not supposed to prevail. Think of it as a piquant fresh vegetable chutney.
Fill and close the jars: Using canning tongs, remove the jars from the canner, carefully pouring the water back into the canner. Set next to the salsa in the saucepan. Turn the heat under the canner to high. Use a ladle to pour the salsa into the jars through a canning funnel, leaving 1/2-inch headspace at the top. Run a clean chopstick around the inside of the jar to dislodge any trapped air. Wipe the rims of the jars with a damp paper towel. Place the lids on, and screw on the rings until just finger-tight.
I really believe that salsa is best when only a few key ingredients are involved. While there are literally millions of salsa recipes, many with dozens of ingredients, I still believe in my mantra, that simple is always best. For my salsa recipe I like to stick with the key ingredients, which in my book are tomatoes, garlic, onions, cilantro, chiles or jalapeños and a little bit of lime juice for some tanginess.

I like you have made great salsa in the past and it was runny I am in the process of making your recipe now and just need to know when putting jars in water bath , do I put water over the top of jars to process? The picture shows less than that . Can’t wait to dig a chip into it!
Put all of the ingredients in your blender. Adding the tomatoes first makes it much easier to blend. Do not add water unless it won’t blend and then only add 2 tablespoons of water at a time. Most of the time you won’t have to add any. Too much water makes the salsa runny. You want a full-bodied slightly chunky tomato salsa.
Making this right this very second. Following exactly to start with..except am throwing in a couple of Thai peppers along with the 4 smallish jalapenos…which I may regret…them things are supposed to be killer hot. I will say, that it is taking significantly longer than the 10 minutes prep time for the water to simmer off (step 2), but I’m in no huge hurry….I have wine.
