Simple chopping and mixing is all that is required. And while you can serve it right away, I think it gets better to let the ingredients marinate together–have a little party if you will. Adjust heat to your liking. The recipe below is fairly mild, but if you like it spicy, add more pepper and/or jalapeno. And make sure you use ripe peaches. It makes all the difference in the world.
In a hurry? You can skip this step and just cut up some raw tomatoes instead. The extra liquid and skin won’t ruin your salsa, but you may need to add a little extra salt and pepper to balance the flavor.
Definitely 5 stars – Just the right amount of heat. I enjoyed this salsa served over an omelet. It was wonderful. I put all the ingredients in a plastic zip lock bag to mix everything together then just put the bag in the fridge for about 2 hours, put it in a bowl and enjoyed it! I’ve made this several times, and we have really enjoyed the blend of flavors. Today, I made it ALMOST exactly the same (nectarine instead of peach, and agave syrup instead of sugar) but I made a hot version! Sauteed the onion, jalapeno, and nectarine in a little olive oil, added s/p, lemon juice, fresh parsley and finished with a pat of butter off the heat. Served over grilled boneless chicken breast that I’d marinated in apricot brandy, canola oil, and parsley. #Actually put about a tablespoon or so of the marinade into the “salsa” as well, and cooked off the alcohol). Served over basmati rice with some sauteed zucchini….fabulous!

Nothing rounds out a taco party like a bowl of fresh pico de gallo. We make ours with fresh plum tomatoes, but you can use any good looking summer tomatoes you can find. Most salsas like this one don’t call for any oil but we added a couple of tablespoons to even out the bright flavors of the tomatoes, salt, and lime, and help it stick to your chip. A pinch of cayenne adds a little mystery heat, but feel free to leave it out. Seed the jalapeño for a milder batch, but don’t skip it: its floral flavor is what turns a bowl of chopped tomatoes into an addictive dip.
Slice your peaches down the middle and discard the pit. Once the grill is hot, set peaches (cut-side down) on the grill and close the top. Grill for 8-10 minutes, until peaches are very juicy and have those nice charred lines running across. Remove peaches from the grill and turn off grill.
Note: I have also made peach salsa where everything goes into the food processor (well, back in the old days when I had a food processor), but I wouldn’t recommend this method because the peaches are so soft and break up so easily, you lose the beauty of those sweet, juicy bites. I mean bits. I mean bites.

Pico de Gallo is one of my all time favorite things: So fresh. So versatile. All it requires is a little chopping (no cooking!)!  You can use it as a dip with tortilla chips. It can also be used as a mix-in to kick up your guacamole, a topping for tacos or fresh fish, an extra punch for that omelette the possibilities are endless!
You can really use any type of tomato in this recipe. I favor Romas or plum/paste tomatoes since they have more flesh and less juice. However, regular ol’ slicing tomatoes are just fine here too. You might need to seed the juicier tomatoes first so you don’t end up with buckets of tomato juice in your pico.
Use fresh, ripe tomatoes. Not all tomatoes are created equal. When choosing tomatoes, look for tomatoes that are deeply colored and firm, with a little give. If they don’t smell like anything, skip them. They should smell like a tomato — sweet and woody.
Grilled peaches served atop a bed of arugula make for a great summertime salad.  This recipe adds in more unexpected flavors. Gorgonzola cheese is a creamy, rich, and salty addition that gets grilled into the center of every peach. Toasted pecans bring in nutty goodness and a welcome crunch when they are sprinkled on top of the peach-and-gorgonzola combination, but everything is brought together when sweet honey is drizzled on top. For mild pico de gallo, try yellow or orange bell peppers instead of hot peppers. For medium-spicy salsa, choose jalapenos. Serrano peppers are a good choice for very spicy salsa. For fiery hot pico de gallo, experiment with habaneros.

Did you know the hottest part of peppers are the white ribs or membranes (pith) on the inside of the peppers. They’re hotter than the seeds. The more of the ribs you leave on, the hotter the salsa will be. The seeds will add some spiciness since they’ve been rubbing against the pith. If you like your salsa on the mild side, cut out the white part on the inside and remove all the seeds.

when chop the onions, you don’t need to be gentle, gross cut it’s OK, if the flavor its intense, you can reduce by “desfleme”, put the chopped onion on cold water for 1 or 2 minutes, remove and put on a collander to remove the excess of moisture-

Serve slightly chilled or at room temperature. If you serve it really cold it tastes flat. The subtle flavor of the ingredients doesn’t shine through. If you are not convinced, do a taste test. Eat a batch that is ice cold and then eat batch that is at room temperature. You will see the difference. I guarantee it. Pico de gallo is best when eaten fresh.
How about roasting the tomatillos in a very hot skillet first…cast iron works the best. I like the addition of garlic and onions too, all the better if you roast those as well. This roasting adds so much depth to the flavor!
Sometimes the most delicious recipes are also the simplest, and this is an example of how a little time in the kitchen can result in incredible tastes and tantalizingly sweet flavors. This enticing dessert is surprisingly easy to make! Start with a few peaches, some butter, sugar, and sugar. Broil the peach halves that have been brushed with butter and sugar, and they emerge from the oven hot, sweet, and caramelized, enhancing their already incredible taste. Yum. This is something I really enjoy. So fresh and refreshing, especially in hot weather. I had a friend who used to make this mostly from her garden. I think the only difference was the addition of olives. So tasty.
Making authentic Mexican pico de gallo is very easy.  All you need to do is finely chop the tomatoes, onion, jalapeno and cilantro, mix it and season with fresh garlic and lime juice.  You can make it mild by adding less jalapeno, or spicy by adding more – it’s totally up to you! Also, if you are not a cilantro fan, just use fresh parsley instead – it will be just as yummy and zesty!
Sometimes, our fish tacos are made with battered fish fillets (YUM!), but most of the time we go for a healthier version: Baked Tilapia Fish Tacos. When having these, I absolutely LOVE pairing them with this Pineapple Mango Fruit Salsa recipe. Of course, this fruit salsa recipe isn’t just for pairing with fish tacos. It’s delicious with shrimp fajitas, or to simply enjoy with tortilla chips. You could even use it as a topping for a baked or sauteed chicken breast.
