I came up with this fresh-tasting, spicy recipe one night as we fired up steaks smothered in a smoky hickory BBQ sauce on our new grill. The combination was a hit and this has definitely become a new favorite. We like our food spicy, so adjust the amount of chipotle and onion to suit your taste.

Think of these as the foundation for any number of great summer dishes. These sweet gems pair perfectly with cured meats that you can spoon over torn bread and top with a little Dijon mustard. They work double-duty as a final flourish spooned over our irresistible homemade Buttermilk Ice Cream. Or, make a simple peach shortcake by sandwiching the peaches in a warm scone with sweetened whipped cream. If you prefer, you can swap in any summer fruit, and 1 tablespoon of chopped fresh basil or 1 teaspoon of chopped fresh rosemary for the thyme, if desired.
I love how incredibly fresh-tasting this salsa is… between the mango and pineapple, the bite from the red onion and jalapeño, and the pop from lime juice and cilantro, it’s an amazing combination. Not only is it fabulous, but it takes mere minutes to make. If you’re a master with the chef’s knife, you’ll have this thrown together in 10 minutes! We ate this with regular tortilla chips, although my CCC’s cousin served hers with lime-flavored tortilla chips, which were great, as well.

Squeeze a lime over everything, toss well and season with sea salt to taste. This salsa is excellent on anything from chicken tacos to chips to scrambled eggs. It tastes better once it has time to marinate in the fridge for a bit, though, so I suggest letting it sit overnight before serving.
So back to cutting by hand. By cutting the ingredients with a knife you can control the chop. I prefer a chunky salsa and chop both the tomatoes and onions chunky, but you can chop as small or as large as you like. The main thing is to ensure you’re using fresh ingredients.
I not a dumb question at all. I’ve updated the instructions to clarify. You need the whole pineapple to use as the bowl. For the salsa, you only need 1 cup of diced pineapple. The rest of the pineapple chunks that were scooped out can be saved for another use. Best of luck!
Now, slice 1 or 2 jalapenos in half. With a spoon, scrape out the seeds. (If you like things spicy, leave in some of the white membranes.) Dice the jalapenos very finely; you want a hint of heat and jalapeno flavor, but you don’t want to cause any fires. Now dump the four ingredients into a bowl.
Hey- I was a little confused on the cutting instructions for tomatoes, they weren’t detailed enough for me (yes, I am an engineer). When you slice a tomatoe in half should you slice it down the poles or along the Equator???
I’m on the hunt for an out-of-this-world pico de gallo recipe. While this was not it, this will be my go-to base recipe for the time being. Fresh and good. Make sure to drain as much liquid from the tomatoes as possible during seeding and chopping. Let the lime juice and seasonings stand out by eliminating tomato liquid completely. Day 2 the flavor was still good in our case.
