Pico de gallo is a great recipe for using up leftover bits in your fridge. I had half of a white onion leftover from school, and a piece of red onion rest was used for pizza) in my crisper, so I chopped up both and threw them in. Although white onion is more traditional for this recipe, red onion works just as well.

Todd, I think the pickled serranos are spicy enough. I know peppers vary in heat depending upon the soil, climate, seed stock, etc. But I didn’t know serranos are particularly unpredictable. Thanks for the tip!
This was great! It had a really nice tang to it. I changed a couple of things. First, I used 1/2 lb of tomatillos like stated, but used 2 serrano chilies and 3 cloves of garlic. I didn’t feel like chopping the chiles, or anything, so I just roasted them with the tomatillos and garlic for about 5 minutes, and threw them in the blender with some cilantro. It turned out so good. I would definitely make this again, as it required almost no effort and took 10 minutes.
I actually made this salsa with a friend last week in Denver, and then recreated it when I arrived home.  And it has been fantastic!  Have already used it atop blackened tilapia, chicken, shrimp lettuce wraps, bruschetta, and of course….just on regular tortilla chips.  YUM!  (And yes, this recipe makes a large batch!!)
Now, back to the salsa. I think I have stumbled upon the perfect combo of fruits for this salsa–diced fresh pineapple and mango. They just beckon to be paired with savory dishes. Case in point: my Black Bean Burgers with Mango Guacamole and Sweet and Salty Pineapple Chicken Lettuce Wraps. YUM!!!

Turn out a high-rise cake with a moist, tender crumb by layering the ingredients in the bowl in the order specified. If you don’t have a stand mixer with a 4-qt. bowl and paddle attachment, you can prepare the batter the traditional way. However you get this cake ready to go into the oven, its combination of peaches and peach schnapps will emerge from the oven a sweet, moist, sensational cake that will be amazing when it cools and can be sliced and served. Of course it will be difficult to wait, but the wait will be worth the effort—and the waiting, not the baking, may well be the hardest part. Eating this delicious cake is easy.
You can serve your homemade pico de gallo immediately, or store it in the fridge for a while too. I’ve found sometimes letting it sit for a while improves the flavors as they have a chance to meld. You’ll want to eat it within a couple days, though. And keep in mind the peppers often increase in heat a bit the longer it sits.
I have no experience with time shares and after hearing this I think I will avoid it 🙂 . Looking forward to the recipe your Mexican friend gave you! In the mean time, I am loving this fresh and bright pico de gallo salsa. Looks and sounds so good!
To prepare chicken, place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet or small heavy skillet. Combine pineapple juice and next 5 ingredients (through red pepper) in a large zip-top plastic bag. Add chicken to bag; seal. Marinate in refrigerator 30 minutes.
If you want the best flavor go for homegrown tomatoes. They win out every time with their bursting flavor. They have a lot more liquid in them compared to Roma tomatoes and can make your salsa a little watery but I have a fix for that.
This recipe is delicious as-is. Another way I use it is to place all of the ingredients into a food processor, and pulse until lightly pureed. Then I pour the mixture over a nice white fish or grilled chicken breasts.
