The tomatoes are coming in fast and furious and we know the dangers of frosty nights are just around the corner. Sadly, there’s only so much fresh salsa we can eat at any given time – it’s time to squirrel some of that spicy chip enhancer away for the winter months.
Thanks for this great recipe! My friend gave me a big box of her garden fresh tomatoes and I scoured the Internet looking for just the right recipe. I settled on your version and a few of the jalapeño peppers with smokey chipotle peppers and it turned out very well for my first crack at homemade salsa! Thanks again for sharing!
On taco night, my husband polishes off half of a 16 oz. jar of “HOT” salsa all by himself. My daughter eats it with her spoon if we tell her she’s cut off on tortillas chips. Did I mention she’s only two years old?
Bring it to a boil and then reduce the heat to low. Simmer for 15 minutes until it has taken on a deep red color and has more body. Looks good, doesn’t it? The tomatoes need to be very ripe for the sauce to take on the deep red color in the photos.
Brad really doesn’t measure out any of the ingredients, but I’m going to give you estimates of the amount of ingredients you’ll need and you can go from there. If you don’t like an ingredient that we use, just leave it out. If there is something that you really like that we didn’t use, throw it in. You’ll want to go light on the seasoning at first. After you’ve processed the veggies, you’ll want to give the salsa a taste and then you can always add more seasoning to get the taste just right.

I don’t understand why you have to cook the tomatoes for an hour and a half. If you’re draining them, that should reduce cooking time. There’d be absolutely very little nutrition left in these tomatoes don’t you think?
I think our recipe was from another blog, but it’s just that carbonated tomatoes thing that I can’t get into. Didn’t really like LF pickles, either. I’m sticking with yogurt for my probiotics, I guess! 🙂 Katie
This salsa is wonderful. My husband says it’s the best he’s had. I also left the sugar in but used about half of the amount called for in the recipe. I also added a little salt and some red pepper flakes (since I had no more jalapenos).

We needed to ensure consistently high quality batches of salsa year after year. Thus, our quest!
This is pretty close to the recipe I always use to make salsa but it never occurred to me to roast the tomatoes, onions and peppers! I normally just chop up some fresh Roma tomatoes (too much liquid and lack of flavor in canned tomatoes) but I will definitely be roasting everything next time.

This looks like a great salsa recipe I’ve made salsa in the past and canned it. It was really nice having salsa on hand to enjoy. In the recent past, I’ve gotten into making uncooked salsa that we really like but it would be nice to have a few jars sitting on the shelf ready to go. The homemade salsa is so much better too.
Cooking it in the slow cooker allows all of the fresh veggies to blend together and bring out the flavor. The veggies soften and create the best salsa EVER! I love the this recipe makes a lot of salsa and you are able to can it, or give it to your neighbors.

Pulse your food processor about 10 or so times. You don’t want your salsa to get too soupy. However, you’ll want to make sure all of your ingredients are diced up and fully incorporated. I hope your family enjoys this salsa as much as mine does! Even the kiddos go crazy for this recipe!
No, this salsa is not suitable for canning, the acidity has not been tested and with the addition of all those non-acidic veggies it is likely not below the pH of 4.6 required for safe canning. By canning a low acid mix like this you create a perfect environment for clostridium botulinum the bacteria that leads to botulism. The first year I made salsa, I used the boiling water method of removing the tomato skins. I no longer do that!! For me, the way to go is to broil the tomato halves after coring and washing at 425F for roughly 18 min
Use as much or as little jalapeño as you like. If you accidentally put in too much, add more tomatoes or even blend in a little tomato sauce if you have some on hand. This recipe also works well with canned diced tomatoes when you’re craving a taste of summer during the dark days of winter.
The tomatoes come last, just because I want to be the most gentle with them, but I guess it’s not all that important. Everything thus far goes from the food processor to the 4-cup measuring cup, then into the pot.
Ooh, this looks sooo delicious! The idea of canning has always kinda freaked me out b/c I’m super paranoid of giving my fam botulism or something 😛 But! This looks super easy so you may have twisted my arm and now I’ll give it a try. 🙂
The vinegar in this recipe is required in order to make this recipe safe for canning. You can use white or apple cider vinegar with at least 5% acidity. White vinegar is clear vinegar made by distilling corn and rye. Choose an organic brand to avoid genetically modified corn. Apple cider vinegar is made from fermented apples. If you do not want to use vinegar, consider trying this Garden Fresh Salsa Recipe and freezing it instead.
Well, the verdict is in! It’s simply the best salsa we have ever tasted, hands down! We used 10 pounds of tomatoes and adjusted your recipe ingredients proportionately. We used a combo of peppers (red chili, jalapeno, and red and green bell peppers). They produced just the right amount of heat. This amount of salsa yielded 7 pint jars and we devoured the little that was left over. We have more boxes of garden tomatoes and are excited about making another batch. Thanks again Jothan!

C Call, I think you’re a little confused on pH levels. From canning 101: “The way food scientists determine whether something is high or low in acid is by pH. If something has a pH of 4.6 or below, it is deemed high in acid and is safe for water bath canning. If the pH is 4.7 or above, it is considered low in acid.” This salsa registers at 4.0 – which is below 4.6 – so it has an even higher acidity level than is necessary to be safe. In other words, this salsa is well within the limits for safe canning.
