My CSA gives us a salsa “kit” with tomatillos, a jalapeno, and a little cilantro. Their recipe is similar, but they recommend boiling the tomatillos. I much prefer them fresh (as in this recipe). I added an onion, which negated the need for water. Great recipe.
When the oil in the pan is very hot but not yet smoking, place the fish flesh side down and cook for 3 to 4 minutes. As the fish cooks it will turn from translucent to opaque. Turn the fish over and cook for another 3 to 4 minutes. When the fish is done it should be golden and firm but still moist.

Adding minced Garlic, a splash of hot sauce, chili powder, oregano 1 – 2 tsps, Sweet Basil, green onion, [with finely chopped stems, too!], 1 tbsp. of Bermuda onion, chopped fine, adds Color!… and Cumin, will Step it Up, a Whole Lot!… [Cumin, is almost a Mainstay, in Mexican cooking!… ]. Salt & Freshly Ground PEPPER, TO TASTE!…

“Salsa” is the Spanish word for sauce and the common salsas many of us think of are salsa frescas or salsa cruda, fresh sauces served as a condiment with crispy chips prior to a delicious Mexican meal. These uncooked sauces can be pureed until smooth, semi-chunky, or a uniformly chopped pico de gallo.

Fresh tomatillo salsa is very tasty and this is the basic recipe, not really much else to do with it. I only give it 3 forks because there is nothing really earth-shattering about it. To the reviewers who recommend roasting the tomatillos, that is also a very good tomatillo salsa, but it is different. You can make salsa from tomatillos basically three ways: fresh, roasted or boiled. All have different flavor profiles, but if you roast them, that’s an entirely different dish for which epicurious has many recipes (nearly all of them the same).

Good, simple recipe that works well. Watch out for the salt content: add just a little then more if you need it. The recipe leaves you with a lot of liquid – it might be a good idea to pour off some before serving.
