{Please excuse the nasty compost bowl over to the side.} I’m adding chopped tomato, halved jalapenos and chopped onion to the food processor bowl. We used 4 small jalapenos; two seeded and two with the seeds left in. I would say we used about 1/2 cup chopped onion, a handful of fresh cilantro, 3 minced garlic cloves, 1.5-2 tsp ground cumin and about 1 tsp salt.

With fresh ingredients available from the garden or farmers market, and a food processor, it is easy to whip up a batch of fresh salsa. This is a simple go to recipe. This recipe makes about 3 cups of garden fresh salsa. Store the extra in the refrigerator for up to 4 days.

This jewel-toned dip makes the most of fresh winter fruit. If you can’t find clementines, substitute tangerines. Bake the chips up to a day ahead, and store at room temperature in a zip-top plastic bag. You can also prepare the salsa, minus the avocado mixture, a day ahead. Stir in the mixture shortly before serving to keep the avocado green.

Looks like an awesome recipe; we’re trying it tonight. All of our garden tomatoes and peppers are ready for the task. I noticed that some folks were wondering about the tomatoe pounds to cooked cups conversion. I found out that 2 1/2 pounds (1.1 kg) tomatoes = 3 cups chopped and drained fresh tomatoes = 2 1/2 cups chopped and cooked tomatoes = 2 1/2 cups canned tomatoes in puree or juice. You can also substitute apple cider vinegar (ACV) for white vinegar. We mixed up the peppers too, since we like it spicy. Looking forward to a positive result. Used your recipe – produced 5 pints of thick and chunky salsa for canning last night. Had a tiny bit leftover that I just tasted – YUM! My changes – Didn’t have Anaheim peppers – so used “banana” type peppers (it’s what I had on hand!) and I only used 2 jalapenos, one seeded, the other everything. I had help with all the chopping, etc., so it was not as time-consuming as I expected. Thanks!!

Thanks Cheryl. Glad you loved the salsa. Like you said, the recipe is pretty mild, but that way it’s a safe bet for all. I tend to add more jalapeños myself too, but the baseline recipe is a winner. Thanks for the comment. Come back again and try some other Bald Gourmet treats.

Pour 1 can of tomatoes into a blender, and add the jalapeno pepper, onion, cilantro leaves, lemon juice, and salt. Blend until fairly smooth. Pour in the second can of tomatoes and blend briefly. Adjust seasonings to taste by adding more lemon juice and salt. Let the salsa rest for 1/2 hour before serving to allow the flavors to blend.

We have made a lot of salsa over the years and thought we would try this recipe as we do not like thin, watery salsa. Not only does this salsa have excellent consistency, but it has the best balance of intense flavors we have ever canned. We did add a tablespoon of brown sugar for a tad bit of flavor.

Serve this citrusy salsa with chips, or spoon it atop sautéed chicken breast or fish. If you want to make the salsa ahead, omit the cilantro and avocado, and stir them in just before serving. If you find blood oranges, substitute them for regular oranges for color.

Salsa verde is a versatile Latin condiment. Serve it over tacos, grilled steak or fish, or even hot dogs. Use it to make enchiladas or flavorful slow-cooker chicken. Of course, there’s always the option to eat it plain with tortilla chips!

I would like to try your salsa this year. However, I am not a big fan of vinegar in salsa. I successfully substituted lime juice in the recipe I canned last year. Do you think that would work in this one as we’ll? Thanks!

Just made this and can tell it’s going to be a huge hit at our house!! I love that you can add things to taste. We added twice as much lime juice and a little freshly ground black pepper. Thank you for the recipe! I’m making the enchilada sauce next !
