The tomatoes, peppers, onions, and cilantro in this homemade fresh salsa for canning recipe puts the store-bought stuff to shame! It’s a family favorite of ours, and one I spent several hours making last week.
Used your recipe – produced 5 pints of thick and chunky salsa for canning last night. Had a tiny bit leftover that I just tasted – YUM! My changes – Didn’t have Anaheim peppers – so used “banana” type peppers (it’s what I had on hand!) and I only used 2 jalapenos, one seeded, the other everything. I had help with all the chopping, etc., so it was not as time-consuming as I expected. Thanks!!
Prepare your jars and lids by washing in warm, soapy water and rinsing thoroughly. Place jar rack into water bath canner, set jars in the canner, add water, and boil jars for 10 minutes to sterilize. Warm your lids in a small pot over low heat. Keep jars and lids warm until ready to use.
Also, you can separately simmer black beans with a diced white onion until the onion is completely dissolved, along with salt and pepper. Mix that half and half with the cooked salsa, as well as a couple fresh avocados and you’ll have a salsa/dip that’s incredible with blue corn chips or pretty much anything else you can think of.
Wearing latex or plastic gloves, chop the jalapenos finely, removing veins and seeds if you wish to reduce the heat. (If you wish to reduce the heat further, replace some with regular green peppers, but do not increase the total weight of peppers in the recipe.) Chop the onion finely. Chop the tomatoes coarsely. Add the peppers, onions, tomatoes, lemon juice and salt to a large saucepan.
I like you have made great salsa in the past and it was runny I am in the process of making your recipe now and just need to know when putting jars in water bath , do I put water over the top of jars to process? The picture shows less than that . Can’t wait to dig a chip into it!
Start with fresh ingredients. The fresher they are the better the results. Don’t use canned tomatoes. It gives the salsa a metallic taste. You’ll notice that there aren’t any limes in the recipe. Whhhaaattt? Limes throw off the balance of flavors by overpowering the flavor of the tomatoes. But, if you prefer your salsa with lime try adding the juice from only one lime.
I think so, but maybe see if the Ball Blue Book or another official canning resource has a recipe using lemon/lime juice as the acid is critical for safe canning! I do know that you should use bottled juice and not fresh, the acid is a known quantity.

Just finished making this great salsa I love it my husband thinks I need to add more peppers. I did add some of my carrots from the garden. I had a bumper crop of Heirloom tomatoes and added lots of yellow, green, red and orange bell peppers for color. Thanks so much for the great recipe.
Love this recipe – First time I made it (double recipe) I was unable to find anaheims so I used more yellow and some red peppers. I had the family helping chop so we did it manually. The next batch (following the recipe ingredients exactly) I tripled and was on my own so opted for the assistance of the Cuisinart on all chopping except the tomatoes. It was equally as wonderful as the chunky version – much faster and easier on the forearms. This is a new family favourite and going fast…60 lbs of tomatoes next year.
I followed Cassie’s idea with roasting the tomatoes briefly in oven for 18 minutes. Skin slipped right off. Microwaved half a dozen ears of corn, 3 minutes per ear, sliced off the kernels from the cob and added to the mix. Next year I will roast on the grille to see how that changes the taste. This is a nice mild to medium basic recipe you can tweet in so many ways.
Excellent, simple salsa recipe! Fresh, in-season produce make all the difference and are absolutely critical in achieving a good outcome. There is no way this is flavorless unless flavorless ingredients were used. Tastes better the longer it sits. HIGHLY recommend!
My daughter and I made a few batches of salsa this past autumn. The flavour is good and we have gotten many compliments on it, however I personally prefer a thicker salsa. I am definately going to try your recipe next canning season. I prefer using a pressure canner, so need to know if there is any reason you may not recommend this.

This jewel-toned dip makes the most of fresh winter fruit. If you can’t find clementines, substitute tangerines. Bake the chips up to a day ahead, and store at room temperature in a zip-top plastic bag. You can also prepare the salsa, minus the avocado mixture, a day ahead. Stir in the mixture shortly before serving to keep the avocado green.

I made this recipe all with ingredients from our garden and it was great! I did hold off some of my chopped veggies to the side and after pulsating in the blender I added them afterward for the chunkiness, worked perfectly. I did notice it is still a bit runny so next time I think I may try and strain a few of the tomatoes first
The color varies depending on the tomatoes. So just naturally turn darker when cooked. Did you use plum tomatoes or regular tomatoes? Plum tomatoes will get darker than regular tomatoes. Did use do the step where you cook the salsa in hot oil? This step helps a lot to darken it. Cheers!
Love this recipe! I canned some last year and saved the recipe. Making some right now in fact! My husband said that this salsa has ruined him for all other salsa’s! He’s not a picky eater but he knows what he likes and he loves this! So good. I think the cumin and chili powder add a lot! I didn’t use clear jell b/c I didn’t have any but I did like the other reviewer and just simmer the tomotoes longer and it thickened right up. Love this recipe…thank you!!!!
Made this last night and doubled the recipe. It only made 9 pints instead of 12. That’s not my concern though, it was the strong vinegar flavor. Does this dissipate after canning/setting for a period of time? Should I have added more sugar to modify prior to canning? I just didn’t want to have a sweet salsa either.
Blanch, peel and coarsely chop tomatoes. Measure 7 cups (1750 ml). Wearing rubber gloves remove seeds and finely chop jalapenos. Combine tomatoes, onions, green pepper, jalapeno peppers, garlic, tomato paste, vinegar, cilantro and cumin in a large stainless steel saucepan. Bring to a boil; boil gently stirring occasionally until salsa reaches desired consistency, about 30 mins.
With fresh ingredients available from the garden or farmers market, and a food processor, it is easy to whip up a batch of fresh salsa. This is a simple go to recipe. This recipe makes about 3 cups of garden fresh salsa. Store the extra in the refrigerator for up to 4 days.
In a blender or food processor, combine roasted vegetables, whole peeled tomatoes, garlic, lime juice, cilantro, cumin, salt, and pepper. If it makes you feel any better, I’m a wannabe gardener as well. I have 10 garden beds, and almost all of them are doing *terribly* this year. I have a gazillion tomatoes and loads of basil, which is excellent, but not a cucumber or melon or bean in site. And peppers! Who are we kidding? No peppers. 🙁 So, you’re not alone. 🙂
I love that you used roasted canned tomatoes as that makes the process sooooo much easier. It lends such a vibrant red color too! Because of the tedious nature of skinning fresh tomatoes, I never make fresh salsa, but I think you’ve changed my mind. Such a peeeerty salsa ?!
3 Adjust seasonings: Place in a serving bowl. Add salt and pepper to taste. If the chilies make the salsa too hot, add some more chopped tomato. If not hot enough, carefully add a few of the seeds from the chilies, or add a little more ground cumin.
