Yum. This is something I really enjoy. So fresh and refreshing, especially in hot weather. I had a friend who used to make this mostly from her garden. I think the only difference was the addition of olives. So tasty.
Yum! Really, really good, especially with the fresh homemade ricotta. I added a teaspoon of balsamic vinegar (yes, just a teaspoon!) and didn’t put the whole pound of pasta into the sauce, so the dish was a little saucier; other than that, I pretty much followed the recipe. The homemade ricotta was easy and delicious. It’s also salt-free, so if you’re making it, you may not want to reduce the amount of salt in the salsa cruda.

For the mango, I usually use my mango slicer. Do you absolutely need one? No, of course not. But, mangoes and I don’t have the best history. First, I always thought I didn’t like mangoes and then once I realized that I do like them, I found cutting them open frustrating. I’m sure to some of you this sound ridiculous, but mango cutters make my life easier and I swear by them.

A couple of weeks ago, my Chief Culinary Consultant and I had a family dinner at his cousin’s house, and she had a mango salsa and chips for us to munch on before dinner. It was delicious! On Saturday, feeling inspired by the gorgeous weather, I loaded up on mangoes and pineapple at the grocery store and made my own!

I managed to find serrano peppers in the produce section of my local Walmart, but if you can’t find them you can use jalapeño peppers instead. We’ve made pico for family functions for a long time, but this particular recipe is modified from one of my mom’s friends. Other than the time it takes to chop of veggies, this recipe is very simple and is great for chips or to serve with any Mexican food. These ingredients combine to make a delicious, fresh and irresistible topping for any Mexican dish.
I’m feeling a lot better this week than I was last week, so I’m anxious to kind of play catch up around the house.  It’s amazing how quickly just the normal stuff gets out of control is you let it.  I’m sure I’m not the only one that feels that way!
You know what I don’t get? Why didn’t the rep say that the person we were looking for would be OUTSIDE of the airport? That small detail would have made a big difference, because then we wouldn’t have paused to try to find the right person in the chaos inside.
