I’m sure it would be fine to can as long as you know what you’re doing when it comes to canning. I think there is a specific process you have to go through with the cans. I’m sorry I’m not more help, but I’ve never tried canning. Every year I tell myself I’m going to can salsa, but I never get around to doing it. I would google canning salsa, so at least you know the process. Good luck!

So I made the salsa the other night. Everyone loves it. I added a extra haberno and one extra tomato paste. Squeezed out 6 pints. First time making salsa and your recipe nailed exactly what I was looking for. Thanks again

Hi Lauren. Your “small air bubble” batch of salsa should be fine. Eat and enjoy! As for storage time, most canning books tell you to store in a dark cool place for up to a year. That’s sound advice, as canned food starts to loose its nutritional value after that. However, I’ve eaten a few jars of this salsa that were 2 and 3 years old, and they still tasted great and had a good texture. They maybe just weren’t as “fresh” feeling. That all being said, if your gift recipients like salsa, it probably won’t last more than a week or two!

3 Adjust seasonings: Place in a serving bowl. Add salt and pepper to taste. If the chilies make the salsa too hot, add some more chopped tomato. If not hot enough, carefully add a few of the seeds from the chilies, or add a little more ground cumin.

There always a debate as to which kinds of tomatoes are the best for making salsa.  The answer is simply this:  The best tomatoes are ripe tomatoes.  Whichever ones you can find that have the most flavor.  If they happen to have a higher water content, that’s fine.  We’ll drain them.

Hi, Sommer, I was pointed to your blog by Cory Kowalski. I immediately saved your detox soup recipe AND the salsa one. I love salsa and love making it, but I can’t eat as much as I’d like to because I have kidney disease (and tomatoes aren’t good for me). I am going to try making a salsa with an extra dose of tomatilos, substituting them for some of the tomatoes. I’ll let you know how it comes out. Place the tomatoes, onions and garlic on a baking sheet and roast for 15 minutes or just until the onions and tomatoes start to get a little char on them. Remove the baking sheet from the oven and let the tomatoes cool for about 5 minutes.

This recipe is really Brad’s and I actually posted it a couple of years ago, but we’ve updated the recipe slightly and, of course, the photos too. Garden tomatoes are the star of the show in this salsa, but if you’re not lucky enough to have a garden full of tomatoes, I suggest buying your tomatoes from a Farmer’s Market. You’ll be surprised what a difference in flavor it makes.

In a slow cooker add tomatoes, onions, peppers, apple cider vinegar, and coriander. Cook on low for 4-5 hours or high for 3-4. Right before it is done add in the cilantro, basil, and sage. Let it cool for a bit.

I tried this and loved it! I used one banana pepper, one large jalepinio (sp) and topped the of the cup with yellow peppers. I don’t care for green peppers so I just used one cup of them and the second cup of a mix of yellow and orange. I love garlic, so a added 4 cloves total. I used fresh cilantro and oragano. I chopped my tomatoes and tried to remove seeds and extra juice as I went along. It turned out fantastic. This recipe is a keeper. Thank you so much for sharing it!! 5 stars!!

Ha! That’s too funny! Sometimes I just see the perfect related post title from a friend and don’t even check it out b/c I know all their stuff is great. I wonder if Donielle got more or less visits b/c people though it was an odd salsa? Whoops! Glad I could give you a chuckle, anyway!

Brad has a small garden in the back yard. We have tomatoes {several different types}, jalapenos, zucchini and cantaloupe. The zucchini and cantaloupe haven’t produced yet, but we have loads of tomatoes and jalapenos.
