I made this recipe over the weekend – my first attempt at salsa. It’s fantastic. I ended up using green peppers because that’s what I had in my garden. The half-pint that I didn’t process starts with a mild sweet taste, followed by the pepper kick. Thanks for sharing this, along with easy steps to follow.
@Carl. My wife is Mexican and I’ve traveled there many times; particularly the state of Michoacán where she’s from. In Mexico, the sauce that you make is called a “Salsa Cruda” (Raw Sauce). It is perfectly fine to make it without frying/simmering since it’s just one of the MANY ways to make a sauce in the Mexican kitchen. I must say that adding cumin to a sauce is more typical of Tex Mex than the authentic Mexican style sauce. Also, lime is only added to something such as pico de gallo. Salsa verde is another sauce that made by cooking tomatillos, jalapeños and a couple garlic cloves in slightly boiling water for about 10 min. Once the tomatillos are cooked, you add them with a little bit of the cooking water, the chilies, garlic, a piece of white onion, cilantro and salt to a food processor. This is carefully processed due to the hot liquid. Tomatillos can be pretty acidic so a pinch of sugar can be added to counter that. I’ve been in a ranch in Michoacán where they cooked a goat over a wood fire. I saw them make the “birria” (typical Mexican sauce for roasted meats) over the same wood fire. It picked up the smoke taste and I’ll tell you, it was the best BBQ goat that I EVER had!
Plus, tomatoes, at least, are healthier when cooked because heat releases the lycopene. So I’m more than happy to preserve fresh produce in my canner when it’s salsa, of which we can never have too much. I have just made this in advance for tonight to serve with burritos. I also increased lime to 2T, added a pinch of ground cumin and halved the sugar to 1/2tsp. I also added cucumber as I like the cool flavor it lends to the dish. Tasting it now it was lovely, I’m sure by tonight it’ll be magnificent!
This sweet salsa with a spicy kick will receive rave reviews and it couldn’t be simpler to prepare. Just toss coarsely chopped blueberries with drained pineapple tidbits, green onions, basil, mango chutney, lime juice, salt, and crushed red pepper. Serve with our Jerk Pork Tenderloin or as a tasty appetizer with tortilla chips.
4 Simmer all ingredients in a large pot: Put all of the ingredients into a large (8-qt) stainless steel pot. (Do not use aluminum or the acidity of the sauce will cause the aluminum to leach into the sauce.)
A little browning of the skin on top is desired. When done cover the tray with a cloth or piece of parment paper for about 10 min and those skins can be pulled off very easily. With this method there is less water taken in by the tomatoes inadvertently, making a much richer thicker salsa The juice emitted from the tomatoes during the broil and given up by the tomatoes when they sit, I put ontop of the stove in a pot and reduce the fluid level by at least half. Add this back into the prepared tomatoes (we don’t want to lose any of the natural acidity of the tomatoes in it’s juice). P. S. I use lime juice too! It rocks Guidelines in canning usually recommend lime juice in containers as opposed to fresh as the acidity can vary using the fresh fruits. Be safe and once again congrats!
Basically, everything is going to go into a big pot to be cooked. It doesn’t really matter in what order the ingredients go into the pot. I tend to put the vinegar, tomato paste and spices in first, if only because I’m afraid I’ll forget them at the end and have an incredibly boring (and unsafe) batch of salsa!
Simple, fresh and easy to make. A winning Mexican restaurant style salsa prepared with plum tomatoes, onion cilantro, and serrano peppers. Fresh tomatoes, not canned, star in this recipe. In Mexico, it is known as salsa roja (red sauce) or salsa de mesa (table sauce). And just like in the U.S., it is served in every restaurant before your meal with tortilla chips.
Wipe rims of jars then put lids on. Screw the canning rings on using your fingertips (not your entire hand) until it’s tight. (This will get it to the correct tight fit; using your entire hand will make it too tight.)
Hi Tina. Good question. I don’t know about cornstarch and what that would do from a canning perspective. Older cans of tomato paste often do get a metallic taste from the can, but new/fresh cans usually do not in my experience if that helps at all.
This is the BEST salsa! The Verde is great too. I didn’t habe Serranos so used jalapenos. Salsa wasn’t “right” so sent son to store, added Serranos. Perfection! Note i use both peppers in recipe. When people come in and see tomatillos on counter they get very happy! This recipe had enhanced our lives bc it’s great. Freezes well and i can use non gmo organic ingredients. Thank you.
I’ve never made salsa before but wanted to after I got some tomatoes from a family member. I just did a search on pinterest and this one came up. I made it today and you’re right, it’s the best damn salsa ever!!! My kids, who are little (6, 4 and 2), could not stop eating it. “We love this salsa. It is delicious. when my tomatoes are ripe, I love to make this salsa. I don’t add jalapeno peppers, I don’t like it spicy, but I do substitute green peppers. I forgot the salt once & it didn’t taste as good, I added it & it was great. Love this salsa!!!!!”
Paste/Roma tomatoes work great for canning as there’s less seed & juice ( I like San Marzano, Amish Paste, Black Icicle). You can also play around with all sorts of heirloom tomatoes just remember some have higher water content and might need to be boiled down further. They will also contain more seeds to remove (although I’m sometimes lazy and leave them).
This is the 2nd time I’ve made this recipe this summer. I made a double batch at the end of June (12 jars) and I’m down to my last jar so I’m making another double batch. It has been a big hit with the entire family! Thanks for such a great recipe!

This is pretty much my exact recipe, only I stopped measuring a long time ago and I’ve never tried using canned tomatoes along with the fresh. Fresh salsa is definitely the way to go. I can’t even eat canned salsa anymore. One thing I do sometimes to add depth is to roast the tomato, garlic, and jalapeno (just throw it all on a baking sheet and let it go for about 20 minutes at 400F, turning once if I’m not feeling too lazy). This in combo with the fresh cilantro and lime juice gets rave reviews. I bet using canned tomatoes would add a similar depth!
Wash all jars and lids thoroughly with soap and water and rinse well. Fill your canner with enough water to cover the jars by at least 1 inch and bring to a simmer. Using a pair of canning tongs, lower the jars in gently, tilting them to fill with the hot water. In a small saucepan, keep some water warm but not boiling; place the lids in the water. Have an additional kettle of water on to boil.
Although the jarred stuff can be found at every turn, making fresh, homemade salsa takes little effort and there’s no better way to bring the fresh flavors of the garden together with such versatility.
I made this recipe all with ingredients from our garden and it was great! I did hold off some of my chopped veggies to the side and after pulsating in the blender I added them afterward for the chunkiness, worked perfectly. I did notice it is still a bit runny so next time I think I may try and strain a few of the tomatoes first

Sometimes, during the summer, our tomato plants decide to have a party on the vine, so to speak, and produce way more tomatoes than we can possibly eat, even if we are eating them every day, sliced, salted, and served with a little balsamic or mayo.
With fresh ingredients available from the garden or farmers market, and a food processor, it is easy to whip up a batch of fresh salsa. This is a simple go to recipe. This recipe makes about 3 cups of garden fresh salsa. Store the extra in the refrigerator for up to 4 days.

I really believe that salsa is best when only a few key ingredients are involved. While there are literally millions of salsa recipes, many with dozens of ingredients, I still believe in my mantra, that simple is always best. For my salsa recipe I like to stick with the key ingredients, which in my book are tomatoes, garlic, onions, cilantro, chiles or jalapeños and a little bit of lime juice for some tanginess.
Remove the tomatoes (from water, grill or broiler) and let cool to the touch. Remove and discard the peels. Cut away any cores if you haven’t done so already. Chop the tomatoes care to save any juices that may come out of them.
Arrange the tortillas in a stack and cut into 6 equal wedges. Pour about 1-inch of oil in a large frying pan over medium-high heat to 350 degrees F on a deep-fat frying thermometer. Fry just a few at a time, turning occasionally, until crisp and lightly browned, about 1 minute. Drain on paper towels; sprinkle lightly with salt, if desired. Store in an airtight container.
This is my favorite salsa recipe! Thank you for sharing it. I has to substitute half lemon half lime today. That should be ok, right? Also, I doubled the batch and got 13 1/2 pints. Last year I also had extra than what the recipe called for. I weigh and measure everything precisely. I notice that after I strain the tomatoes and boil/simmer them that the consistency is still watery. Should I just squeeze the tomatoes after staining? This still should be ok to eat even though it made more?

Combine all the ingredients in a bowl. If you prefer a smoother texture―more like jarred―pulse half the salsa in a food processor, then combine it with the remaining chunky half. Cover tightly and refrigerate for up to 5 days.
