I made this last year with home grown walla walla onions and the yellow peppers. The salsa was wonderful although a little sweet. My girlfriend thought maybe the onions and the yellow pepper. Any suggestions as to what I might do to take the too sweet out? Other then that it was the best ever.
Hahaha, we haven’t been to the Beltline Bar in forever. Mostly we don’t like the hour long wait time! We have been going to El Arriero on 28th st near Woodland Mall. My son loves the salsa and he has eaten salsa with a spoon too!
I would like to try your salsa this year. However, I am not a big fan of vinegar in salsa. I successfully substituted lime juice in the recipe I canned last year. Do you think that would work in this one as we’ll? Thanks!

Excellent, simple salsa recipe! Fresh, in-season produce make all the difference and are absolutely critical in achieving a good outcome. There is no way this is flavorless unless flavorless ingredients were used. Tastes better the longer it sits. HIGHLY recommend!
In the photos it looks like you used red onion. Is that your recommendation? And is that green pepper I see? Also, how fine do you cut the spicy peppers? I don’t want someone to get a big spicy mouthful!
I’ve been searching for a thicker than normal salsa recipe, and I think I’ve found it. What I may attempt at changing is the simmering the tomatoes for 90 minutes on the stove(that’s brutal in the heat of late summer). I think I’m going to try pressure cooking them for 45 minutes instead. This is how I make my lip-smacking marinara, and I am betting this is going to make for tasty salsa as well.
Fabulous recipe, Jeanette. I made it on Friday with some of my home-grown tomatoes. My version is a little chunkier because my food processor wasn’t up to the task & I had to everything by hand. Very tasty, though. I’ll be making it again.

I always make salsa as an afterthought and, as you said above, using fresh tomatoes always leaves a watery texture; it’s something I’ve always just shrugged off as a normal salsa “thing”. But with fire roasted tomatoes… Yes! Tomatoes are out of season here at the moment, but I may just try it with red bell peppers as a substitute!

The directions with this salsa recipe state: Process 35 minutes. Now that I’ve updated yesterday’s canning tomatoes post with correct, safe information (you should check it out for sure), I would recommend finding a board-approved salsa recipe online and using their processing times. For me, I’m going to process 35 minutes for pints and 40 for quarts and call it good, but I’m crazy like that.
Hi Erin. I believe Romero peppers are real sweet, aren’t they? Aneheims are more like a mildly spicy green bell pepper. The Romeros will probably be just fine, but will make the salsa a little sweeter, which may not be a bad thing. A closer substitute would probably be poblano peppers or yellow wax/hungarian peppers. But the nice thing about salsa is that you can use any peppers you like….just keep the quantity measurements the same when canning.
