If want to know how to turn green tomatoes red but only have a few on hand, using a jar or brown paper bag are suitable methods. Add two to three tomatoes and one ripening banana to each jar or bag and seal closed. Place them in a warm area away from sunlight and check regularly, replacing banana as needed. Tomatoes should ripen within one or two weeks.

I haven’t made this in the crock pot but I think you could do it, Donnie. If it doesn’t cook down/thicken enough, I would eventually remove the lid and cook, stirring occasionally, until it’s as thick as you like. If you try, I’d love to know how you make out!
Acidification: To ensure safe acidity in whole, crushed, or juiced tomatoes, add two tablespoons of bottled lemon juice or 1/2 teaspoon of citric acid per quart of tomatoes. For pints, use one tablespoon bottled lemon juice or 1/4 teaspoon citric acid. Acid can be added directly to the jars before filling with product. Add sugar to offset acid taste, if desired. Four tablespoons of a 5 percent acidity vinegar per quart may be used instead of lemon juice or citric acid. However, vinegar may cause undesirable flavor changes.
Looks amazing – and truly a great recipe during tomato season. I am always swimming in a sea of tomato plants and there are more tomatoes than recipes – or at least that’s what it feels like at the time. 🙂
I’ll quickly recap how we ended up with so many green tomatoes this summer.  This is only our second year to have a summer garden. Last year we got several rounds of gorgeous red tomatoes before the neighborhood squirrels realized how great our tomatoes taste straight from the vine.  When we found the first tomato on the ground with squirrel bites all over it we hoped it was just an isolated incident, but we just kept finding more each day.
Being originally from Texas, I find Jenn’s approach shockingly mild. So I use probably ten times more peppers (mainly jalapenos, some serranos) than tomatoes. Subsitute tomatillos to make salsa verde. My salsa is NOT for the faint of tongue!

Ball Canning is a good place to start, but I doubt you’ll enjoy the excessively pickled flavor. But you have to learn to walk before you can run. Buy a pressure canner. It’s the only way to make home canned salsa using lower amounts of lime juice as a preservative. Research: Annie’s Salsa for some direction.
* What is a paste tomato?  Any tomato that is generally oval or cylindrical or with plum or paste in it’s name.  Paste tomatoes are seedless (or nearly so) and have a higher solid content.  This makes them more suitable for processing.  Roma tomatoes are a paste tomato which are great for canning and making and sauces.
This is a very good salsa recipe. Simple ingredients are boiled and blended to created a flavorful, spicy mixture that’s great with tortilla chips and on Mexican-style foods. The amounts of onions and jalapenos may be varied; canned crushed tomatoes may be substituted for fresh.
