I meant to measure too (even bought a scale) but forgot! 🙂 I think my recent batch that I produced 7 cups worth was about 12 lbs of tomatoes. If you do measure or count the tomatoes please let us know. Excited to plan ahead next year to make even more salsa!
Mel! You never disappoint. The legend continues! I’ve long wanted to make my own salsa but never had the courage to try it until your recipe. I knew you wouldn’t let me down. This turned out so delicious. I usually like mild salsa and I think this is closer to medium but it is perfect! Thank you for yet another amazing recipe.
P.S. somehow I just discovered your blog and my kids actually ate the two skillet recipes I made! We’re putting them on our rotation along with the broiled fish tacos. They didn’t like those, but my husband raved about them so the kids are out of luck. 🙂
thanks for the recipe – is it one of the new ball recipes? Anyways… the use of steam canners was approved for use last year by one of the university extension offices, and is on the NCHFP website – with a disclaimer they have been approved for anything under 45 minutes. They added a statement they will be updating their pages to reflect that.
Mexican food gets a bad rep for being greasy, heavy and, unhealthy but stop and think for a second. Salsa is nothing but concentrated vegetables. It’s the tastiest way ever to get your daily veggies. You can eat as much as you want guilt free. It’s rare that your favorite food can be the healthiest food too so enjoy.
And this will last for awhile in the fridge although I have to say it doesn’t last very long in our house.  Just pop this in a mason jar or a weck jar to take it to your next party and I bet you become as popular as Drew is.
Last night I wasn’t so sure about the acv. Today, I LOVE this salsa! Ill be pinning it so I never lose it. I did cut back on the green pepper, sugar, and jalapenos. I used about 8 Anaheim, a couple of serannos. Yum!!
I used Roma tomatoes. 3 or 4 lbs of the little ones would have been too expensive 🙁 Really good but a little watery for my liking.. It was similar to (but still way better than) restaurant style salsa. Next time I’ll roast them first and throw half of the tomatoes and everything else in the food processor and pulse a few times before adding the rest of the tomatoes cause I want more chunky tomatoes in my salsa. I did decide to strain it and add a small can of tomato sauce to make up for the liquid and I was very happy with the result.
Important: To avoid the risk of botulism or food poisoning, follow the directions exactly for each recipe.  Use the amounts of each vegetable listed in the recipe.  Add the amount of vinegar or lemon juice listed.  The only changes you can safely make when following a salsa recipe are to substitute bottled lemon juice for vinegar and to change the amount of spices and herbs.  Do not alter the proportions of vegetables to acid and tomatoes because it might make the salsa unsafe by reducing acidity.  If you still want to alter your salsa recipe, then store the salsa in the freezer or refrigerator instead of canning.  Do not thicken salsas with flour or cornstarch before canning.  After you open a jar to use, you may pour off some of the liquid or thicken with cornstarch.
In a large saucepan, combine the first nine ingredients. Stir in the tomato paste, vinegar and lemon juice. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring frequently. Cool to room temperature. Cover and refrigerate until chilled. Serve with chips. Yield: 4 cups.
Oh, how I wish my sweetheart loved cilantro. No mind. I get to eat the entire batch myself! This looks like a wonderful salsa, so much so that I featured it as the Recipe of the Day today on a Facebook page I curate called Cooking with Whole Grains & Real, Whole Foods. 1. Adjust oven racks to lowest and upper-middle positions; place 12-inch skillet on lower rack and heat oven to 425 degrees. Line rimmed baking sheet with aluminum foil and place cherries, cut side up, on sheet. Roast cherries on upper rack until just tender and cut sides look dry, about 15 minutes. Transfer cherries to medium bowl, toss with lemon juice, and let cool for 5 minutes. Combine 2 teaspoons flour and cinnamon in small bowl; dust flour mixture evenly over cherries and toss to coat thoroughly.
Made this recipe today and it was our first attempt at salsa from homegrown veggies from our garden.  Very easy to follow the directions and it is delicious. We already planning our second batch. Thnx  
OMG this is so good!! I made a batch at 7am for a bbq this afternoon and ate half of it for my breakfast, so had to replenish it with another can of tomatoes (only had a can of chopped tomatoes left, which worked fine, plus another pinch of all the other ingredients… Amazing! Only thing I had to change was using garlic powder as I had no fresh, still fine. Used 1 green chili and half a red, no seeds, perfect! And 1/4 tsp sugar, as I’m not a huge fan of sweetness. Thank you so much, this is my go to Salsa now :)) Going to make your hummus now too!
I know this is a good recipe because it is basically the same as my own recipe. I would recommend roasting the peppers for extra flavor and even experimenting with different peppers, like chipotle peppers (yum–very tasty!) Also I prefer using Texas sweet onions (the large sweet yellow onions) rather than purple onions. The lime juice and cilantro really give it a fresh taste. Sea salt is also a very good ingredient.
Also, FYI… When I was trying to leave my comment.. A really annoying box kept coming up in front of the screen asking me to follow you. Not that I mind being asked that because I like your blog… But it made it where I couldn’t even type anything and I just went to my notes in iPhone and typed my comment that way and then copied and pasted it (I had to do the same thing for this comment too) . This fresh and easy restaurant style salsa makes a perfect appetizer and comes together in less than 10 minutes. This salsa uses only fresh ingredients and can easily be made in a blender or food processer.
They can also be placed in single layers on shelves or within shallow containers and boxes. Green tomatoes should be stored in temperatures between 55 and 70 F. (13-21 C.). Ripe tomatoes can be stored in slightly cooler temperatures. Remove stems and leaves before storing tomatoes this way. Make sure the storage area is away from direct sunlight and not too humid. Excessive humidity can cause tomatoes to rot. Suitable storage areas include garages, cellars, porches, or pantries.
CheChe is right, “you’ll never buy jarred salsa again” I made the Tomato version today & I must say it’s perfect!! I did seed the peppers & used only 1/2 t. salt. I could eat this stuff on everything!! can hardly wait to make the Mango version. thank you for the great recipe CheChe.

I’m Mel, lover of great food, easy recipes and dark chocolate. I’m also a busy mom to 5 kids (+ 16 chickens, 4 cows, 1 dog, 1 cat, 1 beardie, and about 10,423 honey bees)! It’s a bit crazy, a lot yummy, and very real around here.
One way how to turn green tomatoes red is to ripen mature green tomatoes in a well-ventilated area at room temperature, checking their progress every few days and discarding unsuitable or soft ones. The cooler the temperature, the longer the ripening process will take. For instance, mature green tomatoes will usually ripen within a couple of weeks in warmer temperatures (65-70 F./18-21 C.) and about a month in cooler temperatures (55-60 F./13-16 C.).
You need to taste it first, start with a smaller amt of jalapeños, take a couple of teaspoons of the mixture and place in a cup then put the cup in the freezer for 2 to 3 minutes- then sample…. If you like it then boil 20 to 30 minutes, if not then add more jalapeños and repeat freezer test until you reach the desired hotness. ( it tastes spicier when it is hot, that is why you do the freezer test. Works every time!
If you prefer more oregano, a hint of basil, some black pepper, or even the flavor of bell pepper, add it.  It’s hard to go wrong when you start with fresh, vine-ripened tomatoes.  And you absolutely don’t have to be going on vacation to justify making this savory shortcut sauce!
Process in a boiling water bath for 15 minutes, then remove and let sit, undisturbed, for at least 12 hours before checking seals. It is important to let them sit undisturbed for 12 hours because the sealing compound on the lids is still cooling and hardening, completing the seal. While the jars cool, you will hear a “plink” type sound from each jar – this is the jars completing the vacuum seal as the final air escapes the jar. After 12 hours have passed, remove the bands and check the lids – press down in the center of the lid. If you cannot push the lid down any further, the jar is sealed. If the lid “gives” a bit, and you can push it down, the jar did not seal. You can either put the band back on the jar, and reprocess it for another 15 minutes, or you can just put it in the fridge and use it within 3 months.
Everyone loves salsa and I like your version a lot – I can make it now with canned tomatoes. I just made some tomato soup using canned tomatoes and it was delicious . Thanks for a great snack we all will enjoy (especially me) at FF #51 🙂
Rachel, you can substitute jalapeños for the serrano chiles and get great results. Try the recipe with 2 jalapeños and if the salsa is too spicy reduce it to one. Removing the seeds and veins from the chiles reduces the heat too. Cheers!
