Just a caution, you can’t simply take fresh salsa and stick it in the freezer, you do need to cook it down first.  The longer you let your salsa simmer, the more liquid will evaporate and the thicker your salsa will get.  If you want to speed up the process, add a can or two of tomato paste during the cooking process.

Boil your canning lids (available in most grocery stores, You will need the box with the screw bands. Amazon currently only has regular mouth sized) in a small separate pan on the stove. They need to boil a few minutes to activate the seal along the edge. Then let them simmer on low heat as you seal the jars.

Hi Erin. I believe Romero peppers are real sweet, aren’t they? Aneheims are more like a mildly spicy green bell pepper. The Romeros will probably be just fine, but will make the salsa a little sweeter, which may not be bad thing. A closer substitute would probably be poblano peppers or yellow wax/hungarian peppers. But the nice thing about salsa is that you can use any peppers you like….just keep the quantity measurements the same when canning.

We made 32 pints of this salsa on Labor Day. Definitely would make good Christmas presents. I posted a picture on my Facebook page and credited you for the amazing results. We live in Jerome, Idaho and still have many tomatoes in the garden so may make another batch. The instructions and pictures are great.

Salsa disappears fast around our place. We buy the huge bags of Costco Organic Tortilla chips occasionally. It’s not hard to sit down and gorge oneself on a bunch of those crisp chips dipped into this spicy salsa. If dinner gets too late those chips and a bowl of salsa go really fast!

Look for large juicy tomatoes when you make salsa. Removing the seeds is easy with a small spoon. Hold the quartered tomato over a bowl to catch the seeds and juice as you scoop them out, and use it in the salsa if you like.

Thanks, I ended up with 24 1/2 pints. I processed them the full time and now they are “popping” away. The taste is PERFECT. My husband is having grilled chicken with a spoonful of salsa across the top.

This is my favorite salsa recipe! Thank you for sharing it. I has to substitute half lemon half lime today. That should be ok, right? Also, I doubled the batch and got 13 1/2 pints. Last year I also had extra than what the recipe called for. I weigh and measure everything precisely. I notice that after I strain the tomatoes and boil/simmer them that the consistency is still watery. Should I just squeeze the tomatoes after staining? This still should be ok to eat even though it made more?

I truly LOVE salsa, but have never made my own. You definitely make it sound SUPER easy, though, so I should probably just give it a try! The next time that I make it to my local Farmer’s Market, I will have to pick up the ingredients that I need :).

This actually is the exact recipe I received from the friend. I wouldn’t change processing times without mentioning it. The other recipe I used processed for 30 minutes. ??? The salsa was great last year, not overcooked at all! Strange. I’ll have to look up some other recipes to decide if I want to shorten the time. I’m all nervous about some aspects of canning now! The color varies depending on the tomatoes. So just naturally turn darker when cooked. Did you use plum tomatoes or regular tomatoes? Plum tomatoes will get darker than regular tomatoes. Did use do the step where you cook the salsa in hot oil? This step helps a lot to darken it. Cheers!
